I didn’t either until I saw Jeffrey Mauro make a Greek yogurt panna cotta on The Food Network Show, “The Kitchen.” Inspired by his recipe, I decided to create my own version using SCD yogurt and coconut milk instead of heavy cream. After years of making my own yogurt, incorporating it into this dessert felt like the perfect fit.

Ingredients You’ll Need

  • 2 cups of plain SCD yogurt
  • 1 1/4 cups of full-fat coconut milk
  • 1/2 cup of honey
  • 2 tablespoons of plain gelatin
  • 2 teaspoons of vanilla extract

Step 6: Pouring into Ramekins

Divide the mixture evenly among six 4-ounce ramekins. Cover each ramekin with a lid or plastic wrap and refrigerate for at least four hours, or until set.

Making the Blueberry Topping

Ingredients for Blueberry Topping

  • 1/2 cup of blueberries
  • 1/4 cup of honey
  • 2 tablespoons of lemon juice

Step-by-Step Guide

  1. Combine the blueberries, honey, and lemon juice in a saucepan.
  2. Cook over medium heat until the blueberries start to break down and the mixture thickens, about five to ten minutes.
  3. Remove from heat and let it cool. This topping will thicken further as it cools.

Serving Your Yogurt Panna Cotta

How to Serve

You can serve your panna cotta directly in the ramekins or unmold them onto plates for a more elegant presentation. To unmold, run a butter knife around the edges of the panna cotta and gently invert onto a plate.

Adding the Topping

Top your panna cotta with the blueberry sauce. For an extra touch, you can add some toasted walnuts or fresh fruit. This not only adds flavor but also a delightful crunch.

How to Make Delicious SCD Diet Yogurt Panna Cotta

Blueberry Sauce

  • ½ cup fresh or frozen blueberries
  • ¼ cup honey
  • 2 tbsp lemon juice

Panna Cotta

  • Add yogurt to large mixing bowl

  • Add a half cup of the coconut milk to the yogurt and whisk until smooth

  • Set mixture aside

  • Pour the ¼ cup of coocnut milk into a small bowl

  • Sprinkle gelatin in an even layer over the top of the coconut milk

  • Let bloom for five minutes

  • While gelatin is blooming, add the other half cup of coconut milk to a small saucepan

  • Add the honey and heat over low heat until it just starts to bubble – stir as needed

  • Allow to simmer for two to three minutes and then remove from heat

  • Whisk vanilla into the honey mixture

  • Whisk bloomed gelatin into the honey mixture while it is still warm

  • Whisk u ntil gelatin is melted and absorbed into the honey mixture (pick out any unmelted lumps and throw away)

  • Whisk gelatin mixture into the reserved yogurt and coconut mixture

  • Whisk until completely combined and smooth

  • Pour evenly into your ramekins

  • Cover and chill at least four hours before removing from ramekin and/or topping and serving

Blueberry Sauce

  • Add blueberries, honey, and lemon jucie so small saucepan

  • Heat over medium-low heat for 5 – 10 minutes until blueberries break down, stirring frequently

  • Use spoon to mash blueberries as needed

  • Allow to cool to at least room temperature before topping the panna cotta
